Simply tasty

It’s been a while since I last posted a recipe. This one is not very fancy, but it solved a ‘problem’ I’ve had for a while.

The husband and I love curry. We often treat ourselves with take-away curries from the nice place on the high street. Sometimes, I’ll cook the curry from scratch: I make a very nice thai prawn curry and my attempts at beef kofta were more than decent. Sometimes, we’ll just get the jarred stuff and use it as a base. Tonight was a jar jalfrezi one. My problem with homemade curry has always been the rice. I didn’t know how to make a rice as good as the pilau rice from the curry house.

The other day, as I was watching this cooking show, this very famous Indian chef I can’t remember the name of just now, was cooking some rice the ‘home’ way. He just put it in the microwave with his spices. It was like a light bulb moment for me.

We don’t have a microwave, so I made it on the hob, the good ol’ way. 1 cup of basmati rice for 3+ cups of water (or whatever amounts you use to cook). Then I added a pinch of salt, 5 cardamom seeds, 1 star anise, 4-5 curry leaves and a little pinch of caraway seeds. I considered adding half a stick of cinnamon, but I chose not to. It might be worth a try. I boiled that for 10 min, covered, then turned off the heat and left until all the water had been absorbed.

Now, that is easy, isn’t it? You can’t really call that cooking! But so perfumed!! I was so pleased with the result. I can’t wait for the next homemade curry to prepare some more of this rice.
