Healthy side

Spring being almost upon us and my GP being slightly concerned about my low blood pressure, I have decided to up my intakes of fruits and veg. So, in my last grocery order, I got ourselves some baby spinach. We both enjoy spinach and it is full of iron, which I need to up my blood pressure a little bit. BUT, the iron in the spinach is badly absorbed by the human body, unless there is a source of vitamin C nearby. Tomatoes are the vegetables with the highest content of vitamin C. Match made in heaven.

And it was very tasty! Here is how I prepared my healthy side dish. I sliced 4 tomatoes and cover the bottom of a small-ish oven dish with half of the slices. I sprinkled a pinch of salt. Then I added a very very generous handful of spinach. Sprinkled some more salt. Covered with the remaining sliced tomatoes. I added several dollops of creme fraiche and some bits of creamy cheese (I used Boursin with pepper, as it was what I had in the fridge). I covered that with breadcrumbs (I reckon that some grated cheese like parmesan wouldn’t hurt, but I was out of it). I baked that at 200 degrees C (preheated oven) for about 25 minutes.

It was very delicious! And perfect to serve alongside some grilled salmon.
