Healthy supper

We love fish in this house and we have to have fish at least once a week. We like it in all its form. Except maybe with a greasy batter around it. I never understood why would someone do that to a very tasty piece of fish… Anyway, yesterday was groceries delivery day, so yesterday evening was fish dinner (I like my fish fresh, you see).

It was salmon. Salmon steaks to be precise, served with a couscous herby salad. Very fresh, VERY tasty.

So, this is how you make it.
First, preheat the oven to 180-200 degrees C. In an oven dish, put a tablespoon of olive oil. Coat the fish with this oil. Salt and pepper on both side. Cover with a sprinkle of fennel seeds (I LOVE fennel seeds with salmon) and a thin slice of lemon. Bake / grill for about 20 min.

Now, the couscous salad.
In a salad dish (ha ha ha), put the couscous grains, pour over some boiling water (it should be twice as high as the couscous). Cover the dish with a tea towel and leave for 5 min. In the meantime, finely chop some FRESH basil and mint leaves. Cut some cherry tomatoes in half. When the couscous is ready, separate the grains with a fork. Add a tablespoon of olive oil and the juice of half a lemon. Salt and pepper to taste. Let it cool down for a few minutes, then add the herbs and the tomatoes.

Dinner’s ready!
